Ouch...

This past Sunday AM before church, we were all out for a little morning activity... I was getting in a good routine of pushing Avery in the jogging stroller while Ali rode her bike around the circle a few times.  All was going well, until... I decided to take one final cool down lap and rolled my ankle on the edge of the paved road!  OUCH!  

The x-ray shows a "Fracture through the distal Fibular tip". 
I have an appt with the orthopedic Tues at 1:30.
Sunday...                                      Monday...      .
Tuesday...
I went to the orthopedic and was issued a boot for the next 6 weeks.  I'm in an adjustment phase to adapt to my limited functionality and to allow some assistance.  

The Doc said that the break was low enough on the fibula that it wouldn't interfere with the functioning of the ankle joint and therefore would not require surgery.  The fibula is the stabilizer, non weight-bearing bone, so that's good and means I don't require crutches.  
Glad I am allowed to walk with the boot, but my ankle is very sore -- beats the heck out of requiring crutches for the next 6 wks!!! I was still trying to figure out how it was going to work with crutches to hold Avery's hand as we walk into school, or anywhere... God resolved that challenge!

Eddie's doing a great job stepping up to the challenge of taking care of ALL his girls -- so blessed to have such a wonderful hubby!

Some of My Favorite Quick & Easy Recipes

These are some of my favorite recipes
Please send me your favorites that are EASY to make... QUICK & don't have too many ingredients!
Also, if you have a good way to plan meals out for the week that works for you, please share.
  • BBQ
  • CHICKEN POT PIE
  • CHILI
  • PARTY CHICKEN
  • CORN BEEF & CABBAGE
  • ORANGE SALAD
  • FRENCH TOAST
  • BROCOLI & HAM CASSEROLE
  • CRAB CAKES
  • CHICKEN PARMESAN
  • HONEY BAKED CHICKEN
  • CHICKEN RING

CROCK POT BBQ
~4lb+ boston but (pork)
Kraft sweet & spicy BBQ Sauce x 2
cider vinegar

Put the boston butt in the crock pot on high, add some (~1/4) bottle of BBQ sauce.
add some cider vinegar to the remaining bottle of BBQ sauce to thin it out a little.  
Poor a little more of the thinned out BBQ sauce into the crock pot.
Let it cook til it's tender and will easily fall off the bone.
use tongs to remove the cooked BBQ from the crock pot into a tupperware
shred/separate BBQ and add more of the thinned out BBQ sauce to taste.




 April's Chili
 my recipe... a picture of the ingredients!
You can't really go wrong here and every time I make it, it taste a little different... all good!
 ground beef ~2lbs                                                 Black beans x 2 cans
Corn x 2 cans (drain)                                         small Tomato Paste x 1can
Large Crushed Tomatoes x 1can                     Rotel x 2 cans (1 cilantro, 1 hot)
spicy chicken beans x 1 can                   cheddar cheese & sour cream (after cooked)

Cook chicken/beef, add in ingredients til warm.                     Serve w/rice or alone - add  cheese and sour cream & enjoy.
Roll into burritos, use on a taco salad or layered dip, make into casserole, so many options... and it  
freezes great!
